In 1904, Charles O. Taylor worked the Mexican National Exposition at the St. Louis World’s Fair, where he fell for authentic Mexican cooking. Back home in Carlinville, a stranger he came to aid taught him the recipe — and that fall, Mr. Taylor opened a small chili parlor. Over a century later, the same recipe is still hand-packed on West Street by Carlinville hands.
